You could go Intel if the machine isn't for gaming, but for gaming CPU isn't as important as graphics and 4 3870XTs in CrossfireX is the only choice for graphics at the moment, so you have to get AMD,
You could Tri-SLI 8800GTX but it wouldn't be just as good and wouldn't support DirectX 10.1 and Shader Model 4.1
Edit:
If you plan to play DirectX 10 for longer than a year than don't waste money on old tech and get ATI.
nVidia have no DX10.1, SM4.1 cards.
The new engines even the next installment of Crysis will use DX10.1 & SM4.1,
don't get left behind after spending $2,000 on graphics.

My machine would outperform that and cost €1,600, I wouldn't use the term Ultimate for mine.
Also get the 750GB SATA2 drives with 32MB not 16MB cache, almost as good as a 10k Raptor with 500GB more storage
